I did a lot of research when developing the recipe for this beer, drinking saisons from all over the world (oh no, not that), emailing back and forth with breweries and yeast manufacturers, and pestering local Brewmasters for their tips and tricks.  I’m very happy with the results and others seem to enjoy it as well.  We were invited to brew a batch with Burnt Hickory Brewery and serve it at their 2nd Anniversary party and we received great reviews.  In various forms the beer has won several medals at homebrew competitions. Synesthesia American (my brett variant) recently took Gold for Belgian Ales at a local comp.  I love this beer.

I’ve had a lot of people ask me for the recipe so here it is.  I’ve brewed the base saison several times and I’ve also brewed a variant with peaches, one with sun-dried tomato and basil (my homebrew partner-in-crime Brian’s creation), and an American farmhouse variant with Brettanomyces.  I’d like to do a gin-barrel aged variant as well, I think those flavors would play well with this beer, maybe with some tart raspberries added.

A couple of notes beforehand on my process.  I do a long boil on this one, 120 minutes.  When I developed the recipe I did this to try to get a bit more flavor out of the beer.  I’ve wanted to try it with a shorter boil but it’s a case of “if it ain’t broke, don’t fix it”, so I keep my 2 hour boil.  I ferment up to 90°F, starting at 67° and bumping 5° each day with a total of 14 days in primary. Ingredients

  • 8 lbs 8 oz Pilsner Malt
  • 1 lb 8 oz White Wheat
  • 1/2 oz Hallertauer @ FWH
  • 1/2 oz Saaz @ 60 minutes
  • 1 lb Belgian Simplicity Candi Syrup @ 10 minutes
  • 1.0 oz Mosaic @ flame-out for 10 minutes
  • WLP566 Belgian Saison II Yeast

Process

Mash for 75 minutes at 148°F and sparge to target volume.  Boil 120 minutes following addition schedule above.  Chill to 67°F and pitch healthy yeast into well oxygenated wort.  Start fermentation at 67° and ramp 5° every 24 hours to 90°, allow to ferment for a total of 14 days, verifying FG is reached.  Bottle condition to 3.0 vols for at least a month (you can drink it earlier but it’s much better after a month+), beer develops champagne-like characteristics with age.
