Transilience: Noun. A leap across something, or from one thing to another.

(who says you can’t learn something from a beer show)? Transilience is the latest seasonal addition from Savannah’s Southbound Brewing Company. We talked to Brewmaster Smith Matthews and Sales/Marketing Director Carly Wiggins about it.

Tell us about the development of Transilience. How did you come up with the recipe?

Smith: “This recipe is based off of a traditional Berliner Weisse. However, we like to do things differently sometimes. We decided to go ahead and add the fruit in (since Berliners are typically served with traditional woodruff or raspberry syrups). We also decided to ramp it up to a 7%’er, because…why not? Who doesn’t love a light bodied sour beer with fruit that packs a punch? All good things.” 

What was the thinking behind using mangoes and pomegranate?

Smith: They help balance out the sharp lactic acidity to make for a refreshing beer. Mangos and Pomegranate came to mind one day when I experienced them both together in a dish. I thought, that would make a great Berliner Weisse syrup. When I thought about it more, I decided to go ahead and add them into the beer. Pretty unique but turned out awesome.

 It’s a pretty big beer for a Berliner (7%). Were you looking to brew it at a higher ABV than normal?

Smith: We purposefully brewed it at a higher gravity because I knew that with the additional fruit and residual acidity I could sneak in a higher gravity without it being too apparent and off putting. Its crisp, refreshing, fruity, tart, overall the perfect summer beer.

You make mention this beer was brewed specifically to break into the Atlanta market. Why did you choose this one, and why is it important to increase your Atlanta footprint?

Smith: We chose this beer for our move to Atlanta because we wanted to show the Atlanta folks the kinds of brews we are capable of. This is a hard beer to pull off without it being overbearing, so a well executed imperial fruited Berliner Weisse seemed like just the beer to get us a little attention.

SB85 is happening before we all know it. What kind of things are you preparing for at the brewery?

Carly: With SB85 going into effect this September, we have been working to prepare for all of the changes. We will be bringing on a couple new staff members and restructuring the management of the taproom. This opens up opportunities for promotion with our current staff for those looking for a little more responsibility. We already have a dedicated “cask master and pilot batch coordinator” and we know he is certainly going to be much busier! To ensure that we have a variety of beers on at all time, we will be bringing in some additional small fermentation tanks to assist with this. We also have plans to build out a patio seating area, bring in some games, and book more music here. We are incredibly excited to see the positive impact SB85 will have on our business and the rest of the craft industry in Georgia.

What’s coming up next for Southbound?  

Carly: Right now we are focusing on our newest release, the All Access Pass variety pack. We just launched this last week and it includes our three core beers, Hop’lin IPA, Scattered Sun Belgian Wit, and Shakedown Saison. It also has a rotating seasonal item in it, starting with Transilience! These are limited this year, since we are testing out the waters with the. Planning for this was a big undertaking and we are excited to see how they are received in the market.

In addition to that, we have the Southbound Taphouse opening up in the Savannah airport. Construction should be completed on that in early July. They will be using our beer for wing sauces, beer cheese, and other items on the menu. They will have a pool table for those wanting to hang out while waiting on their flights and of course plenty of Southbound beer! We were able to help design the taphouse so it mimics the look and vibe of the brewery. We have our local muralist going in to create some amazing art, barrel staves on the walls, actual wooden pallets, and so much more.  This won’t be your typical airport taphouse or bar. We are incredibly fortunate and grateful to have a great partnership with HMS Host to create this unique experience for those traveling through Savannah.

This is a nice, deceptively strong Berliner. It was the pretty clear favorite of the Beer Guys crew when we had it during the show. In fact, we drank the whole six pack! I even caught a little funk on the end after it warmed.
